Easy Make-ahead Freezer Meals

Before my son was born, I made a handful of freezer meals. While we were blessed with family and friends who fed us in the early newborn days. I knew the meal train would eventually end, so I wanted to have a few easy-to-grab meals in the freezer.

Here are a few of the recipes I had lined up:

Baked Oatmeal Cups

These are so easy to grab on the go. A lot of people brought us dinner, so having breakfast food handy was a nice change-up. I love how versatile these oatmeal cups can be! I want to experiment some more with different variations like orange + cranberry, banana + walnut, blueberry + lemon, and strawberry.

Tuscan Chicken Pasta

This one is really simple! I used rotisserie chicken to make it easy and the flavor was great. So many of our meal-train dishes were marinara-based, so I love that this recipe includes sundried tomatoes in a creamy, white sauce. Be generous with the sauce! You can thank me later.

Classic Chicken Pot Pie

This recipe is easy-peasy, especially if you cheat and buy pre-made pie crust. I did notice that once the pot pie is cooked, frozen, and reheated, there isn’t as much texture in the filling. So this meal goes great with a fresh, crunchy salad.

Cheeseburger Casserole

Need I say more? I’m a big fan of recipes that call for either ground beef or pork. This one is best with beef, but I’m sure pork would be good too. It is also a great last-minute dinner option, even if you don’t make it for the freezer.
